Granola Baked Apples: Simple Healthy Dessert

I have a bag of granola which I tired of and has been sitting in my larder. When I came across this recipe in Anita Bean’s The Runner’s Cookbook, I just had to try it: after all, I love apples, cinnamon, and it was a chance to use up some of the granola!

Anita says this dessert is low in sugar and a good source of fibre, Vitamin C and quercetin (a plant compound with potent antioxidants which helps to reduce inflammation and promote muscle repair). If you have plenty of apples to use up, make a bigger batch – reheated leftovers taste wonderful, or just eat them cold!

  • 2 large apples, halves & cored
  • 4 tsp olive oil or butter
  • 1 Tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 50g granola
  • 50g chopped nuts
  1. Preheat oven to 190 degrees C
  2. Arrange the apple halves, cut-side up, in a baking dish.
  3. Dot them with olive olive or butter.
  4. Drizzle with maps syrup and sprinkle with cinnamon.
  5. Spinkle granola & nuts over the apple halves.
  6. Pout about 50ml of water into the bottom of the dish, cover with foil and bake for about 30 minutes until apples are soft.
  7. Serve with Greek yogurt (I added a drizzle of raspberry sauce to mine)

    1. I typically find granola too sweet – not quite sure how this particular packet found its way into my larder; it does make for a good topping.

      Actually, if you don’t have granola about, I would just sprinkle rolled oats, more nuts, and a touch more maple syrup and butter on top of it all, and that would make for a good topping!
