I love smoothies & milkshakes & bubble tea & just about any beverage you can drink through a straw. I have never had a smoothie bowl before though, that is, using a smoothie as a base and then piling lots of goodies on top. So, this is a conservative first attempt at The Smoothie Bowl.
What I love about using red dragon fruit is that it gives our concoction an intense hue which I rarely see in food; it is nature’s own food colouring!
Put into a blender & blitz:
- 1 frozen banana
- 1/2 red dragonfruit, coarsely diced
- 1 passionfruit pulp
- 1 tsp chia seeds
- 1 tablespoon low fat yogurt
Makes 2 small portions, if you are sharing, or 1 large glassful, if you are having it all to yourself!
For my bowl, I sprinkled some pumpkin seeds & toasted hemp seeds on top. Younger daughter preferred hers in a glass, no seeds added.
